Sirloin Stuffed Spaghetti Squash

  1. Cut squash in half lengthwise; scoop out seeds and microwave cut side down in 1/2-in water for 15 minutes.
  2. While the squash cooks, chop onion, green pepper, and tomato.
  3. Combine seasonings. Press into both sides of steak.
  4. Cook steak in large skillet with oil over medium heat for 3-5 minutes.
  5. Turn steak, moving to one side; saute vegetables during last 5 minutes.
  6. Cut steak into 1/2-in cubes and mix with vegetables and pan juices.
  7. Pull a fork from edges through squash until it resembles spaqhetti.
  8. Season with salt & pepper to taste.
  9. Top each squash half with part of the steak, vegetables and pan juices. Sprinkle with parmesan.
  10. Bake in a preheated 350F oven for 8-10 minutes.
