Western Beef Casserole
- 1 lb. lean ground beef
- 1/3 c. chopped onion
- 1 (8 oz.) can tomato sauce
- 1/4 tsp. each: garlic powder, salt and pepper
- 1 (11 oz.) can corn, drained
- instant mashed potatoes, made according to directions for 4 to 6 servings
- 1 (4 oz.) can chopped green chilies, drained
- 8 oz. shredded Cheddar cheese
- 1 medium tomato, chopped
- In a large skillet, brown ground beef and onion; drain well. Add tomato sauce, garlic powder, salt and pepper; blend well. Spoon into a 2 1/2 to 3-quart lightly greased casserole.
- Spoon corn evenly over meat mixture.
- Stir green chilies into potatoes and spread over corn.
- Sprinkle with cheese.
- Bake at 350u0b0 for 30 to 35 minutes or until cheese is melted and bubbly around edges. Let stand for 5 minutes.
- Top with chopped tomatoes.
- Makes 6 servings.
