Ginger Beef
- 1 pound beef (sirloin),
- 2 Tbsp vegetable oil
- 1 carrot cut into matchsticks
- 1 onion cut into wide strips
- 2 Thai chili peppers, minced
- 2 Tbsp fresh ginger, minced
- 2 cloves garlic, minced
- Marinade:
- 2 Tbsp soy sauce
- 1 Tbsp cooking wine
- 1 tsp sugar
- 2 Tbsp ginger juice
- Sauce:
- 1 Tbsp wine
- 2 Tbsp light soy sauce
- 1 Tbsp vinegar
- 4 Tbsp sugar (can substitute brown sugar or honey, if desired)
- 1/2 tsp sesame oil
- 2 Tbsp water
- 1 1/2 Tbsp corn starch
- Asian chili sauce to taste
- Cut beef into thin strips, cutting along the grain. (The meat is easier to cut if it is partially frozen).
- Mix marinade ingredients. Add to beef and marinate unrefrigerated for 30 minutes.
- Mix the sauce ingredients and set aside.
- Heat wok on high, once hot add 1 Tbsp of oil.
- Add onions to hot oil and stir fry for one minute.
- Add garlic, ginger, and pepper and continue to fry unti onions become tender and you can smell the garlic.
- Remove onion mixture and set aside.
- Wipe wok clean.
- Return wok to high heat, add oil, and stir fry beef in batches.
- Return cooked beef to wok, add onion mixture and carrots and stir until well combined.
- Add sauce, bring to a boil and cook until thickened.
- Remove from heat and serve with sticky rice and stir fried vegetables.
