Skirt Steak With Chimichurri Sauce
- Sauce:
- 1 cup fresh parsley; finely chopped
- 1 cup fresh cilaantro; finely chopped
- 1 bunch scallions; finely chopped
- 1 garlic clove; finely chopped
- 1 T oregano; finely chopped
- 1/2 c olive oil
- 1/4 c red wine vinegar
- Salt and Pepper
- Steak:
- 1.75 # Skirt steak, room temperature
- Salt and Pepper to taste
- Oil for grill
- Prepare chimichurri sauce:
- Mix all ingredients and season to taste with salt and pepper. Refrigerate and bring to room temperature before serving over grilled steak
- Pat steak dry. Season with salt and pepper.
- Grill on oiled grill/grates over medium-high heat, 2-5 minutes per side, depending on thickness, for medium rare.
- Let rest 5 minutes; slice on the diagonal.
