Bite-Sized Oyster Rolls
- 2 T. peeled grated fresh ginger
- 1 T. fresh chopped cilantro
- 1 T. finely chopped green onion
- 1 tsp. grated lime zest
- 1 tsp. fresh lime juice
- 1 tsp. Asian sesame oil
- 24 square wonton wrappers
- 24 small fresh oysters
- 3 c. veggie oild for frying
- lime-soy sauce for dipping
- In a small bowl, combine ginger, cilantro, green onion, lime zest, lime juice and sesame oil and stir well. Place one wonton wrapper on work surface with a corner facing you. (Keep the rest of the wrappers covered with a damp cloth.) Place one oyster diagonally near the bottom of wrapper. Spoon 1/2 tsp. ginger mixture on oyster. Fold bottom corner of wrapper over oyster, fold in sides and roll. Cover with damp cloth and repeat with remaining oysters.
- In large skillet or deep fryer, heat oil to 375F or until a small bread cube dropped in the oil sizzles and turns golden. Working in small batches, fry oysters until golden, about 2 minutes. Using a slotted spoon or spider, transfer to paper towel to drain. Serve hot with dipping sauce.
- Lime-soy Dipping Sauce
- Combine 2 T. rice vinegar, 2 T. lite soy sauce, 1 T. lime juice, 1 green onion, thinly sliced.
