Thai Beef With Basil And Chili
- 1.5 lbs tenderloin tips, cut into strips
- 1 red pepper, cut into strips (and any other veggies)
- 8 tbsp veg oil
- 4 tsp chopped garlic
- 8 fresh hot chilies, chopped
- 4 tsp fish sauce
- 4 tsp sugar
- 4 tsp soy sauce
- 4 tbsp oyster sauce
- 8 tbsp water
- 20 whole leaves fresh basil
- 2 tsp cornstarch
- 1 tbsp water
- 2.5 freshly steamed rice
- Heat oil in a wok or large frying pan on high heat until it is just about to smoke.
- Add beef and stir fry for 2 minutes.
- Add garlic and chilies and stir fry briefly. Do not let burn.
- Add fish sauce, sugar, and soy sauce and stir fry for 1 minute.
- Add oyster sauce and water and cook for 30 sec
- Add peppers (and any other veggies) and 3/4 of basil leaves. Stir fry for 2 minutes.
- Dissolve cornstarch in water, add to wok to stir fry for 1 minute until sauce has thickened.
- Serve over steamed rice with remaining fresh basil on top.
