Popa'S Chicken Soup
- 1 whole chicken
- 1 lb. chop meat
- 2 tsp. nutmeg
- 2 tsp. pepper
- 12 chicken bouillon cubes
- water
- 6 stalks celery
- 6 carrots
- 1 bundle scallions
- 1 bundle parsley
- 1 pkg. very thin egg noodles (rice can be used in place of noodles)
- Put chicken in soup pot.
- Cover with water and add bouillon cubes, 1 teaspoon pepper and 1 teaspoon nutmeg.
- Cook 1 hour or until chicken pulls away from bones.
- Remove chicken, de-skin and debone.
- Set aside.
- Make meatballs about 1-inch with chopped meat, 1 teaspoon pepper and 1 teaspoon nutmeg mixed into meat.
- Put into broth and cook.
- Chop celery, carrots, scallions and parsley.
- Add to broth.
- Put chicken into broth.
- Add noodles.
- Cook until noodles are done and vegetables are soft.
