Vegetarian Stuffed Peppers

  1. Heat 1 tablespoon oil in skillet
  2. Add one small chopped onion and cook until translucent.
  3. Add two chopped garlic cloves.
  4. Add one can of Italian style stewed tomatoes (cut up tomatoes first)
  5. Reduce heat and simmer until sauce thickens (approx. 10 mins while stirring)
  6. Heat oven to 375 degrees
  7. Cut off the top of 5 peppers and clean out the insides.
  8. Microwave one box frozen spinach.
  9. Cut mozzarella into slices.
  10. Layer spinach, tomatoes and mozzarella in the peppers.
  11. Top with salt, pepper and parmesean cheese.
  12. Bake 40-45 mins. until lightly browned.
