Vegetarian Stuffed Peppers
- 1 tablespoon oil
- 5 peppers
- 2 chopped garlic cloves
- 1 can of Italian stewed tomatoes
- 1 chopped onion
- 1 box of frozen spinach
- 1/2 lb. mozzarella
- Fresh parmesean cheese
- Heat 1 tablespoon oil in skillet
- Add one small chopped onion and cook until translucent.
- Add two chopped garlic cloves.
- Add one can of Italian style stewed tomatoes (cut up tomatoes first)
- Reduce heat and simmer until sauce thickens (approx. 10 mins while stirring)
- Heat oven to 375 degrees
- Cut off the top of 5 peppers and clean out the insides.
- Microwave one box frozen spinach.
- Cut mozzarella into slices.
- Layer spinach, tomatoes and mozzarella in the peppers.
- Top with salt, pepper and parmesean cheese.
- Bake 40-45 mins. until lightly browned.
