Linguine With Meat Sauce Casserole
- 1-1 1/2 lb. extra lean ground beef
- 1 tsp. minced garlic
- 1 28-oz can crushed tomatoes
- 1 8-oz can tomato sauce
- 2 tsp. sugar
- 1/2 tsp. salt (sea-salt preferred)
- 8 oz. uncooked whole wheat linguine
- 1 16-oz container non- or low-fat sour cream
- 1 8-oz pkg. light cream cheese
- 1 bunch green onions
- 1 1/2 C. shredded mozzarella cheese
- Cook beef & garlic in a dutch oven coated with cooking spray, stirring till beef crumbles & is no longer pink.
- Drain beef mixture, pat dry with paper towels
- Stir in tomatoes & next 4 incgedients - simmer 30 min.; set meat sauce aside
- Cook past to directions, omitting salt & oil. Drain.
- Place pasta in a 13x9-in. baking dish coated with cooking spray
- Stir together sour cream, softened cream cheese & chopped green onions - spread over linguine
- Top with meat sauce.
- Bake at 350 degrees for 20-25 min.
- Sprinkle with mozzerella cheese & bake 5 more min. till melted
- Let stand 5 min.
