Pita And Havarti Salad With Olive Salsa
- Salsa
- 2/3 cup (150 mL) mixed salad bar olives,
- pitted and chopped
- 1 clove garlic, minced
- 1/2 tsp (2 mL) sumac* optional
- 2 tbsp (30 mL) flat leaf parsley, minced
- 1/4 cup (60 mL) olive oil
- 1 lemon, juiced
- Salad
- 2 pita breads
- 1/4 cup (50 mL) olive oil
- 1/2 lemon, juiced
- salt and pepper
- 1 pkg (200 g) Dofino(R) Creamy Havarti Cheese, cut into 1/4" cubes
- 1 green pepper, diced
- 2 plum tomatoes, diced
- 1/2 English cucumber, diced
- 1 red onion, peeled and diced
- *Sumac, a Mediterranean spice can be found at your health food store
- Salsa: in a medium bowl combine all ingredients together, stir, cover and refrigerate until
- ready to use.Meanwhile, brush pita breads with oil and toast or grill; break into bite size pieces and place in a salad bowl, drizzle with 2 tsp. olive oil and a squeeze of lemon; season with salt and pepper. Add Havarti Cheese, green pepper, tomatoes, cucumber and red onion; add remaining olive oil and lemon and toss to combine. Place individual portions on salad plates and top with spoonfuls of salsa.
