Apple Omelet
- 1/4 cup packed brown sugar
- 2 tsp cornstarch
- 3/4 c water
- 2 tsp lemon juice
- 3 c apples, 1/2 in thick wedges
- 2 Tabl butter
- 3 Smoked sausage links, sliced diagonally
- 5 egg whites
- 2 tabl water
- 1/4 tsp salt
- 5 egg yolks
- 1 tabl butter
- 1 tsp butter
- ground cinnamon
- Combine brown sugar and cornstarch in saucepan. Stir in the 3/4 c water and the lemon juice. Cook quickly, stir constantly till thick and bubbly. Add apples and mix gently. Cover and simmer 3 mins or till tender. Add 2 tabl butter and sausage, stir till melts. Keep warm. Beat egg whites till frothy, add the 2 tabl water and salt. Beat till stiff, but not dry, peaks form. Beat egg yolks till very thick and lemon colored. Gently fold yolks into whites. Heat the 1 tabl butter in 10 in skillet till drop of water sizzles when added. Pour omelet mix into skillet, building sides to form raised edge. Cook over low heat till lightly brown. Bake at 325 for 10 mins more till knife comes out clean. Fill center with apple mix. Save some to top after folding omelet. Sprinkle with cinnamon.
