N. C. Coastal Seafood Casserole
- 1 (8 oz.) pkg. cream cheese
- 1 stick butter or margarine
- 1 lb. shrimp, shelled and deveined
- 1 large onion, chopped
- 1 green pepper, chopped
- 2 ribs celery, chopped
- 2 Tbsp. butter
- 1 can mushroom soup
- 1 can drained mushrooms
- 1 Tbsp. garlic salt
- 1 tsp. Tabasco sauce
- 1/2 tsp. crushed red pepper
- 1 pt. crab meat
- 3/4 c. cooked rice
- grated sharp Cheddar
- cracker crumbs
- Melt the cream cheese and 1 stick butter or margarine using a double boiler or microwave.
- Saute shrimp, onion, pepper and celery in 2 tablespoons butter. Add to the first mixture.
- Add soup, mushrooms, seasonings, crab meat and rice.
- Mix well and place in a 2-quart casserole.
- Top with mixture of cheese and cracker crumbs.
- Bake at 350u0b0 for 25 to 30 minutes until bubbly. Cool slightly and serve.
