Chicken Parmesan
- 4 Boneless, skinless chicken breasts
- 1 28oz can stewed tomatoes drained
- 1 TB. Italian Herb Mix, Pasta Sprinkle, Tuscan Sunset or Frozen Pizza Seasoning
- 2 cloves garlic, minced or 1/2 tsp. Penzy's Minced
- 1 egg, lightly beaten
- 1/2 Cup milk
- 1 Cup bread crumbs
- 1 tsp. Italian Herb Mix, Pasta Sprinkle, Tuscan Sunset or Frozen Pizza Seasoning
- 1/4-1/2 tsp. salt to taste
- 1/4-1/2 tsp. Penzy's Fresh Ground Pepper to taste
- 1 Cup grated mozzarella cheese
- 1/2 Cup grated Parmesan Cheese
- 2 TB. Fresh basil leaves cut in strips
- Preheat oven to 350
- *Combine the stewed tomatoes, Seasoning of choice & garlic. Pour into the bottom of a 9 X 13 baking pan. In a shallow bowl, combine the egg and milk. In a separate shallow bowl combine the bread crumbs and Seasoning of choice.
- *Dip the chickes breasts in the egg mixture and then dredge in the bread crumbs being sure to coat both sides evenly.
- *Place the chicken breasts atop the sauce in the baking pan, season with salt and pepper.
- *Sprinkle the chicken with the cheeses.
- *Bake at 350 for 30-40 minutes depending on how thick the breasts are until cooked through..
- *Garnish with basil leaves and serve.
