Sweet Potato Casserole With Praline Topping
- 1 cup all purpose flour
- 2/3 cup packed brown sugar
- 1/4 cup chopped pecans, toasted
- 1/4 stick melted butter
- 1/2 teaspoon ground cinnamon
- 4 medium sweet potatoes, peeled and halved
- 1/2 cup granulated sugar
- 1 1/2 teaspoon vanilla extract
- 1 large egg white
- 1 5 oz. can fat-free evaporated milk
- cooking spray
- 1. preheat oven to oven 350 degrees
- 2. combine first 5 ingredients in a small bowl, stirring to form a streusel. Set aside.
- 3. place potatoes in a Dutch oven; add water to cover. Bring to a boil; cover, reduce heat, and simmer 30 minutes or until very tender. Drain well; mash in a large bowl. Stir in 1 cup streusel, granulated sugar, vanilla, egg white, and milk. Spoon into a 2-qt. casserole coated with cooking spray; top with remaining streusel. Bake for 45 minutes.
