Baked Goat Cheese And Caramelized Onion Dip
- 2 lbs goat cheese
- 2 medium sized red onions, peeled and sliced
- 1 tsp dry thyme
- 1 tsp cayenne
- coarse salt and pepper
- olive oil for sauteing
- NOTE: if adding crab- 2 cans or 6oz crab, (lump crab, if the budget allows); if adding figs- 1 1/2 cups chopped fig
- Place sliced onions in a heated saute pan with olive oil and saute until a deep golden brown color has been achieved.
- Add minced garlic and dry thyme and cook for 2 minutes.
- Add salt and pepper to taste and place in either a cast iron skillet or a 1 qt dish and crumble goat cheese on top.
- NOTE: if adding crab or figs- fold into the goat cheese mixture before baking.
- Bake for 15-20 minutes at 350 degrees.
- Serve with baguettes and pears.
