Turkey Pot Pie
- 2 tbsp oil or turkey fat
- 1 c chopped onions
- 1 c diced & steamed carrots
- 2-1/2 c diced turkey meat
- 1-1/2 c turkey gravy
- 1 c cooked and diced potatoes - sweet potatoes work best!
- 2-3 sprigs dried thyme
- 2-3 tsp dried tarragon
- Salt & pepper to taste
- 1 sheet Pepperidge Farm Frozen Puff Pastry, thawed
- Thaw the pastry while you prepare the rest of the ingredients.
- Preheat oven to 400 degrees.
- Heat the oil in a skillet and add the onions. Saute until onions are lightly browned.
- Add in the carrots, turkey, potatoes and gravy. Saute a minute just to heat through (add a little water if the gravy is very thick, but don't make it too runny).
- Taste and correct seasonings.
- Put the mixture into a deep dish pie plate (or 4 individual ramekins).
- Gently roll out the pastry dough just enough to fit the pie plate (it can remain rectangular or square shaped) Or cut it in 4 pieces if you are using 4 individual ramekins. Place it on top of the mixture in the pie plate.
- Bake on a cookie sheet (to catch the drippings) about 30 minutes until the pie crust is browned.
- Serve with salad.
- Serves 4
