Get Fired Up! Buffalo-Basted Stuffed Chicken Breasts With Blue Cheese Dip
- Eight boneless, skinless chicken breasts;
- Eight jalapeno peppers;
- Four ounces cream cheese;
- Four ounces shredded sharp cheddar cheese;
- Eight strips of bacon - uncooked;
- Toothpicks;
- Small bottle of hot sauce;
- One stick of unsalted butter;
- One cup of mayonaise;
- One cup of sour cream;
- Four ounces blue cheese, crumbled;
- One garlic close, finely minced;
- One heaping tablespoon of fresh chopped parsley;
- One tablespoon of vinegar;
- One quarter teaspoon of black pepper.
- Stuffed Chicken
- Mix the cream cheese and cheddar cheese;
- Split open the peppers on one side, carefully scraping out the seeds and membranes;
- Wash your hands after dealing with the peppers or better yet - wear gloves!
- Stuff the cheese mixture into the peppers and set aside;
- Put one chicken breast in a baggie or between two pieces of plastic wrap;
- Pound the chicken uniformly thin; do this to all the breasts;
- Wrap one stuffed pepper with one pounded chicken breast; it should look like a small oblong piece of rolled up chicken; do this with all the breasts and peppers;
- Wrap one piece of bacon around each breast and secure with toothpicks.
- Buffalo Basting Sauce
- Melt one stick of butter and mix well with bottle of hot sauce.
- Blue Cheese Dip
- Mix mayo, sour cream, blue cheese, garlic, parsley, vinegar, and pepper;
- Chill in fridge until time to serve or pack into a cooler for the game.
- Putting It All Together
- Grill the stuffed chicken breasts over medium coals, basting with the buffalo basting sauce, for 25 to 30 minutes, turning frequently. Bacon should get crispy done! Serve with chilled blue cheese dip.
