Sweet And Sour Chicken
- 1 20 oz can pineapple (reserve juice)
- 3 T. Shoyu
- 2 T. Tomato paste
- 1 T. Rice vinegar
- 1 T. Raw honey
- 1 1/2 t. Sriracha
- 2 t. Arrowroot powder
- 1/2 t. Ground ginger
- 1 T. Safflower oil
- 1 lb chicken
- 1/4 t. Black pepper
- 1 green bell pepper
- 1 red bell pepper
- 1 small red onion
- 3 cloves garlic
- 2 green onions
- 1 T. Toasted sesame seeds (optional)
- Whisk 1/2 of pineapple juice from canned pineapple with shoyu, tomato paste, vinegar, honey, sriracha, arrowroot and ginger.
- In a large wok, heat oil. Add chicken and pepper and cook 3-4 min.
- Add garlic, peppers and onions and cook for 2-3 min.
- Add pineapple and cook for 30 seconds.
- Add sauce and cook until thickened.
- Serve over rice. Garnish with green onions and sesame seeds.
