Lasagna
- 1 med onion
- 1 clove garlic
- 2 lbs ground beef
- salt and pepper
- 10 oz lasagna noodles
- 3 cups cottage cheese
- 2 eggs
- 1 cup grated parmesan cheese
- 16 oz mozzarella cheese
- Lightly brown onion and garlic in oil. Add beef and brown. Add 1 tsp salt, dash pepper and next *4 ingredients. Bring to boil and simmer uncovered for 30-40 mins.
- Add 1 T salt and al little oil to 4 quarts rapidly boiling water. Gradually add lasagna so that the water continues to boil. Cook uncovered stirring occasionally 10-15 mins. Drain.
- Mix together cottage cheese, eggs, 1/2 tsp salt, 1/4 tsp pepper and 1/2 cup parmesan.
- Arrange half the lasagna in a greases 13x9x2 baking dish. Spread with half the meat sauce. Top with half the mozzarella and half cottage cheese mixture. Repeat layers and sprinkle with remaining parmesan.
- Bake at 375 for 45 mins. Let stand 10 minutes before serving.
