Cranberry Cake
- 1 C sugar
- 2 c. flour
- 3 tsp baking powder
- 1/2 tsp. ground cardamon
- 1/4 tsp salt
- 3 Tblsp melted butter added to
- 1 C whole milk
- 1 tsp vanilla extract
- 2 C whole cranberries, rinsed adn stems removed (about 2/3 pkg)
- Mix dry ingredients together. Then add 1 cup whole milk with the melted butter and vanilla extract added right into the milk. Dough will be very thick.
- Grease a smaller sized cake pan (not a full sized 9x12 but smaller--6x9) and put the batter into the pan and spread out. Bake at 325 degrees F for about 45 minsor until toothpick comes out clean. Cool before serving.
- Serve with hot cream sauce: melt 1 c sugar with 1/2 c butter (1 stick) and 3/4 c. cream. slowly melted together; don't let it burn. just reheat sauce before serving and spoon over the cake.
