Apricot Granola Bars

  1. Heat oven to 350. Line an 8" square pan with parchment: crisscross two sheets and leave edges overhanging (some butter pan and sheets, I don't find it necessary)
  2. Toast oats, almonds, pepitas on rimmed baking sheet until brown: ~10 minutes.
  3. Chop or process apricots until finely chopped
  4. Combine toasted ingredients, salt and apricots
  5. Combine Almond butter and maple syrup and cook until bubbling over medium heat: ~2-3 min.
  6. Pour over dry ingredients and stir until combined.
  7. Spread in pan and chill at least 3 hours and up to 3 days. Cut into 12 2x4 pieces.
  8. Will keep 5-7 days if individually wrapped; longer in refrigerator.
