Homemade Granola (From Barefoot Contessa)

  1. Preheat oven to 350 degrees (This recipe makes a LOT of granola, sometimes I halve it)
  2. Toss 4 cups old-fashioned rolled oats, 2 cups sweetened shredded coconut, and 2 cups sliced almonds together in a large bowl. Whisk together 3/4 cup vegetable oil and 1/2 cup good honey in a small bowl. Pour the liquids over the oat mixture and stir with a wooden spoon until all the oats and nuts are coated. Pour into a 13x18x1 inch sheet pan. Bake, stirring occasionally with a spatula, until the mixture turns a nice, even, golden brown, about 45 minutes at most.
  3. Remove the granola from the oven and allow to cool, stirring occasionally. Add the following:
  4. 1 1/2 cups small diced dried apricots
  5. 1 cup dried cherries
  6. 1 cup dried cranberries
  7. 1 cup roasted, unsalted cashews
  8. 1 cup small diced dried figs
  9. **I omit the figs and add more of the other fruits. I also add toasted, chopped pecans, or whatever I have around if I don't have cashews. Also, I have used chopped almonds in place of the sliced almonds. Store in an airtight container or ziploc bags.
