B.B.Q. Mini Meat Loaves
- 1 egg
- 3/4 lb. ground beef
- 3/4 lb. ground pork
- 1 1/3 C. hickory smoked barbecue sauce
- 1/2 C. packaged dry bread crumbs or 1 1/2 C. soft bread crumbs for a softer textured meat loaf
- 1/2 C. chopped fresh flat-leaf parsley
- 2 Tbsp. grated onion
- 1 clove garlic, finely chopped
- 1/2 tsp. salt
- Heat oven to 350 degrees.
- Beat egg in bowl.
- Mix in beef, pork, 2/3 C. barbecue sauce, crumbs, parsley, onion, garlic, and salt.
- Shape scant 3/4 C. mixture into 4 x 2 x 1 inch loaf, for total of 6. Place on jelly-roll pan.
- Top each loaf with about 2 Tbsp. of remaining barbecue sauce.
- Bake in 350 degree oven 30 minutes.
- Let stand on pan 10 minutes.
- Serve immediately or cool completely; refrigerate and serve cold.
