Consensus Holiday Turkey
- 2 sticks butter
- 1 cup olive oil
- 3-4 sprigs fresh rosemary
- 3-4 sprigs fresh thyme
- 12-15 leaves fresh sage
- Whole turkey
- Roasting pan
- Kitchen twine
- Metal turkey lacers
- In saucepan melt two sticks of butter, then add olive oil and fresh herbs. Heat, stirring frequently. (This step can be done the day before).
- When it is time to prepare the turkey for roasting preheat the oven to 450 degrees and then microwave the butter/oil/herb mixture then strain into glass container.
- Stuff both turkey cavities and lace with twine and lacers. Then truss turkey. 8' of heavy twine is about right. (http://www.youtube.com/watch?v=5hn5Fes01nc).
- With injector, inject the butter/oil/herb mixture into the breast, thighs and legs in multiple locations.
- Place the turkey BREAST DOWN on a rack in the roasting pan. Baste with butter/oil/herb mixture. Place in the oven. Immediately reduce temperature to 325 degrees. After 5 minutes drape with foil.
- Roast half of projected roasting then remove from oven, flip bird so that it is breast up. Baste again and return to the oven with a thermometer set to alarm at 160 degrees. At this point remove the foil tent.
- Continue roasting until internal temperature reaches 165 degrees, remove from oven and let rest uncovered for 20-30 minutes before carving.
