Susie'S Spaghetti & Meatballs
- Meatballs:
- 1 1/2 to 2 lbs. ground beef
- 1 1/2 cups fresh bread crumbs
- 2 eggs
- 1/2 cup parmesan cheese
- 2 teaspoons sweet basil
- 1 teaspoon salt
- powdered sugar
- 1 tablespoon of olive oil
- Sauce:
- 2 - 29 oz. cans of tomato sauce
- 1 small can of tomato paste (6 oz.)
- 1/4 cup parmesan cheese
- 1 teaspoon sweet basil
- 1/4 teaspoon thyme
- 3 tablespoons of powdered sugar
- 2 cloves of garlic
- Mix the eggs in a bowl and add the breadcrumbs. Add the remaining meatball ingredients and mix well. Form into meatballs a bit smaller than then size of a golf ball. Heat 1 tablespoon olive oil in a dutch oven or pan that can be used on a stove top. In batches, roll the meatballs in powdered sugar and brown over medium-high heat. Remove meatballs to another dish and repeat with remaining meatballs.
- Remove last batch of meatballs and stir tomato paste into pan drippings. Brown tomato paste over medium heat. Add the remaining sauce ingredients mix well and return meatballs to the sauce.
