Enchiladas
- 10-12 tortillas
- 1 lbs hamb or ground sausage
- 1 med. onion, chopped
- 1/2 cup sour cream
- 1 cup shredded cheddar
- 2 Tbsp chopped fresh parsley
- 1 tsp salt
- 1/4 tsp pepper
- Sauce:
- 1 can (15 oz) tomato sauce
- 2/3 cup water
- 1 Tbsp chili powder
- 1/2 tsp dried oregano
- 1/2 tsp ground cumin
- 1 clove galic, minced
- Brown hamb or sausage. Stir in onion, sour cream, cheese, parsley, salt and pepper. Cover and reserve. Heat all sauce ingredients to boiling, reduce heat and simmer for 5 minutes. Pour into to pie pan to cool.
- Dip each tortilla into sauce - coat both sides. Place on a plate. Spoon approximately 1/4 cup hamburger mixture onto tortilla and roll up. Arrange in a 9 x 13 pan. Pour remaining sauce over enchiladas. Cook uncovered at 350 for 20 minutes.
