Enchiladas

  1. Brown hamb or sausage. Stir in onion, sour cream, cheese, parsley, salt and pepper. Cover and reserve. Heat all sauce ingredients to boiling, reduce heat and simmer for 5 minutes. Pour into to pie pan to cool.
  2. Dip each tortilla into sauce - coat both sides. Place on a plate. Spoon approximately 1/4 cup hamburger mixture onto tortilla and roll up. Arrange in a 9 x 13 pan. Pour remaining sauce over enchiladas. Cook uncovered at 350 for 20 minutes.
