Florentiner

  1. Combine nuts and fruit peel and flour; set aside.
  2. In a 1-quart pan combine butter, milk and honey.
  3. Bring to a boil, stirring occasionally.
  4. Boil until mixture reaches 240u0b0 on a candy thermometer, stirring constantly.
  5. Remove; stir in nut mixture. Drop 1 tablespoon at least 3 inches apart onto a greased baking sheet.
  6. Spread into 2-inch circles.
  7. Do no more than 8 or 9 at a time.
  8. Bake at 350u0b0.
  9. Remove from oven and shape immediately into 3-inch rounds, by dipping a 3-inch cookie cutter into water and place around a hot cookie.
  10. Let stand 1 minute; remove carefully with spatula to waxed paper.
  11. Cool completely.
