Sparkling Blueberry Lemonade

  1. In a small sauce pan over medium-low heat, combine the water and the sugar. Stir until the sugar has dissolved. Let simmer for about 10 minutes, until it thickens slightly. Pour in a cup, and let chill.
  2. Once the sugar has chilled in a pitcher combine the lemon juice, seltzer water, and the blueberry juice. Add in the simple syrup to taste. You will use most of it, but if you like it tart, start with less. Serve over ice, with fresh blueberries for garnish.
