Almejas A La Marinera - Fishermen'S Style Clams
- 2 dozen littleneck clams
- 1 big or 2 medium sweet onions
- 1/4 cup good olive oil
- 1/3 cup dry white wine (Sauvignon blanc)
- 2 cups strained tomatos such as pomi
- Kosher salt or sea salt and white pepper
- In a large saute pan steam the clams, as soon as they start to open remove and reserve. Strain the clam juice through a fine sieve.
- Return the juice to the pan and add 1/4 cup olive oil. Sweat diced sweet onions in olive oil until translucent and soft.
- Add 1/3 cup dry white wine and cook for 2 minutes. Add then, 2 cups good quality strained tomatoes , salt and white pepper to taste, reduce to low and cook for about 20 minutes.
- Remove from heat, correct seasoning and add the reserved clams.Serve immediately with plenty of crusty bread .
