Almejas A La Marinera - Fishermen'S Style Clams

  1. In a large saute pan steam the clams, as soon as they start to open remove and reserve. Strain the clam juice through a fine sieve.
  2. Return the juice to the pan and add 1/4 cup olive oil. Sweat diced sweet onions in olive oil until translucent and soft.
  3. Add 1/3 cup dry white wine and cook for 2 minutes. Add then, 2 cups good quality strained tomatoes , salt and white pepper to taste, reduce to low and cook for about 20 minutes.
  4. Remove from heat, correct seasoning and add the reserved clams.Serve immediately with plenty of crusty bread .
