Rainbow Jerk Veggies

  1. Chop Veggies into bite sized pieces. Mix together in a large bowl. Add salt and pepper and jerk seasoning (from prepared jar). Add a dash of Splenda and 1/2 tsp of fresh lime juice. Stir so all veggies are covered. Place bowl in refrigerator for an hour (or overnight if you prefer; the lime juice will prevent discoloration of the veggies)to soak in the marinade.
  2. When ready to cook add vegetable mixture to a "pocket" of tin foil and dot on the butter. Seal pocket.
  3. Grill on top shelf of grill for 15-30 minutes depending on the heat of the grill and how "done" you like your vegetables.

adjust quantities, orange pepper, yellow squash, zuchinni, onion, handfull mushrooms, salt, splenda, lime juice, butter
