Thai Chicken Curry 09/2010

  1. Saute chicken in oil about 5 minutes, add onion and continue cooking about 5 minutes. Add ginger and chopped lime rind, saute 1 minute. Add red curry paste, saute 1 minute, add coconut milk and sweet potatoes, bring to a boil, lower heat and simmer for 5 minutes. Add tomatoes. Cook until potatoes are tender, add lime juice and basil. Serve over rice.
