Thai Chicken Curry 09/2010
- 2-3 chicken breasts, tenders sliced off and all sliced into 1/8" strips
- Oil for saute
- 1/4 cup sliced onion
- 1" piece ginger peeled of skin, continue using peeler and then minced
- 1 lime, rind finely chopped and juiced
- 1 T red curry paste
- 2 T fish sauce
- 1 T brown sugar
- 1 can coconut milk
- 2 sweet potatoes, peeled and cut into 1" pieces
- 1 tomato, seeded and chopped
- Chopped fresh basil
- Cooked rice
- Saute chicken in oil about 5 minutes, add onion and continue cooking about 5 minutes. Add ginger and chopped lime rind, saute 1 minute. Add red curry paste, saute 1 minute, add coconut milk and sweet potatoes, bring to a boil, lower heat and simmer for 5 minutes. Add tomatoes. Cook until potatoes are tender, add lime juice and basil. Serve over rice.
