Split Pea And Smoked Turkey Soup
- 1 Pound dried Split peas
- 3 smoked turkey drumsticks
- 6 cups chicken broth
- 4 cups water
- 1 Knorr chicken homestyle stock concentrate
- 2-3 cups diced celery with leaves
- 3 tbs chopped parsley
- 1 tsp marjoram or tarragon
- 1/2 stick butter
- 2-3 cups diced carrots
- 1 cup diced onion
- 1 leek white part only , rinsed and sliced
- 1 package baby spinach
- 4 tbs dry sherry
- pepper to taste
- Rinse peas in strainer and combine with stock and water in large pot. Bring to a boil.
- Add turkey, celery, 1 tbs parsley and marjoram, reduce heat to simmer, partially covered, stirring occasionally for 45 min. Remove turkey to cool.
- In a separate pan melt butter, add carrots, onion, leek and cook until soft, about 10 min. Add to pot, along with spinach. Simmer , partially covered for 30 min.
- Remove meat from bone and add to soup with sherry, remaining parsley and pepper. heat through and serve! :)
