Split Pea And Smoked Turkey Soup

  1. Rinse peas in strainer and combine with stock and water in large pot. Bring to a boil.
  2. Add turkey, celery, 1 tbs parsley and marjoram, reduce heat to simmer, partially covered, stirring occasionally for 45 min. Remove turkey to cool.
  3. In a separate pan melt butter, add carrots, onion, leek and cook until soft, about 10 min. Add to pot, along with spinach. Simmer , partially covered for 30 min.
  4. Remove meat from bone and add to soup with sherry, remaining parsley and pepper. heat through and serve! :)
