Black Bean Soup
- 2 Slices of bacon
- 1/4 Cup Diced Kielbasa
- 1/4 Cup Diced Onion
- 1/2 Tbsp Chopped Garlic
- 2 tsp Chile Powder
- 1 can Chicken Broth
- 8 oz Mashed Black Beans
- 1/4 Cup Uncooked Rice
- 8 oz Sauted Collard Greens
- Diced Roma Tomato
- 8 oz Whole Black Beans
- Salt and Pepper to taste
- 1 Tbsp Sherry
- Clilantro
- Saute the bacon and then the Kielbasa- remove, to empty pan now add onion, garlic and chile powder cook 2 or 3 min on med heat. Stir in beans, mash them. Add uncooked rice, cook for a minute (you can pre cook the rice if you want). Add broth and be sure to scrap bottom of pan. Bring to a boil. Add back bacon, sausage- simmer about 20 min till rice is cooked. Meanwhile Saute greens and tomatos- add to the soup. You can use canned greens if you like. Add the rest of the can of black beans. You can hit this with some sherry and cilantro. You can even do a shot of OJ or Mango Tango.
