Roasted Red Pepper Meatball Subs
- Meatballs
- 1 slice Weight Watchers 100% Whole Wheat bread
- 1 egg white
- 1 tbsp. minced onion
- 1 tsp. bottled chopped roasted garlic
- 1 tsp. dried Italian Seasoning
- 1/2 tsp. salt
- 1/2 lb. extra lean ground turkey (turkey breast)
- Roasted Red Pepper Sauce
- 12 oz. (1 jar) roasted red peppers, drained
- 2 Tbsp. fat-free low sodium chicken broth
- 4 tsp. bottled chopped roasted garlic
- 1 tsp. dried Italian Seasoning
- 4 Reduced Calorie Wheat Hot Dog Buns
- 4 Weight Watchers(R) Garlic & Herb Cheese Wedges
- Tear bread into small pieces; place in a medium bowl. Add egg white, onion, garlic, Italian seasoning and salt; mix well. Add turkey; mix to combine. Cover and chill while preparing sauce.
- In a blender container or food processor, combine roasted peppers, chicken broth, garlic and Italian seasoning; process until smooth. Pour into medium saucepan; bring to a simmer over medium heat. Meanwhile, form turkey mixture into 12 (1-1/2-inch) meatballs; drop into simmering sauce. Cover and simmer 20 minutes, uncover and simmer until sauce has thickened. Broil cut sides of hot dog buns until golden, spread one side of each bun with 1 cheese wedge. Top each with 3 meatballs and 3 tablespoons sauce. Serve immediately.
