Soul Warming White Chili
- 1 large onion
- 3 cloves garlic crushed
- 1 pound ground turkey
- 1/2 jargreen salsa
- (about 1 cup)
- 2 15 oz. cans chicken broth
- 1 15 oz.can chickpeas
- 1 15 oz. can white beans
- 1 15 oz.can black beans or kidney beans
- 1 15 oz.can whole kernel corn
- 1 teaspon cumin
- 1 tablespoon plus 1 teaspon chili powder
- 2 bay leaves
- salt & pepper to taste
- Coursely chop the onion and galic cloves. Saute in an eight quart heavy pan with about one and a half tablespoons olive oil. Saute until golden brown. Add ground turkey to the onions & lightly brown. While browning the meat, add 1/2 teaspon cumin, 1 teaspoon chili powder, & salt & pepper to taste. Add broth & remaining ingredients. Add remaining spices. Cook covered for approx. 1 1/2 hours on a low simmer.
- ** For soupier texture add one cup water to the ingredients. Also for a spicey chili add 1/2 tsp. cayenne pepper.
- Optional:
- Break tortilla chips into soup & add grated cheddar cheese.
