Calico Squash Casserole
- 1 lb. yellow squash, sliced
- 1/2 lb. zucchini, sliced
- 1 c. water
- 1/2 c. chopped onion
- 1/4 c. chopped green pepper
- 3 Tbsp. chopped green onion
- 1/4 c. margarine, melted and divided
- 1 c. herb stuffing mix
- 1 c. cream of chicken soup
- 1 (8 oz.) can water chestnuts
- 1/2 c. plain low-fat yogurt
- 1/2 c. chopped pimento
- 1 Tbsp. margarine
- 1 large carrot, grated
- 1/4 tsp. pepper
- 1/2 tsp. salt
- Boil for 8 minutes the first 3 ingredients.
- Drain.
- Saute both pepper and onions in one tablespoon margarine.
- Combine stuffing and other margarine.
- Reserve 1/3 cup of mixture.
