Muffaletta Salad & Sandwich
- 1 cup Kalamata Black Olives (pitted) - chopped
- 1 cup Greek Green (pitted) - chopped
- 2-3 cloves Garlic - chopped
- 1/4 cup Roasted Red Peppers - chopped
- 1 Tbl. Red Onion - chopped
- 1 Tbl. Parsley - chopped
- 1/4 cup Olive Oil
- Dash Red Wine Vinegar
- Sandwich Ingredients:
- 1/4 lbs Provolone
- 1/4 lb. mozzarella
- 1/4 lb. Genoa Salami
- 6 ozs. Capicolla
- 1/4 lb Pepperoni (could use 1/8lb of pepperoni and 1/8 lb of Mortadella)
- Chop up all of the vegetables and mix with the olive oil and vinegar. Let marinade for 1 our or more.
- For the sandwich, stack the meats and cheeses and top with the olive salad.
