Chili
- 1 c. chopped green pepper
- 1 crushed clove garlic
- 3 Tbsp. flour
- 2 (28 oz.) cans whole tomatoes, cut up
- 1 (8 oz.) can tomato sauce
- 1 c. chopped onion
- 3 Tbsp. vegetable oil
- 1 lb. beef stew meat
- 3 (16 oz.) can kidney beans
- 1 to 2 Tbsp. chili powder
- 2 tsp. salt
- Cook and stir green pepper, onion and garlic in 1 tablespoon of vegetable oil over medium heat until onions are tender.
- Cut beef into 1/2-inch pieces and coat with flour.
- Brown in 2 tablespoons of vegetable oil.
- Stir in tomatoes, beans with liquid, tomato sauce, chili powder, green pepper and salt.
- Cover and simmer; stir some until beef is tender, about 2 hours.
- Uncover and simmer, stirring some for 30 minutes.
