Sweet Potato Pie
- Dough: 3 Tablespoons soft unsalted butter
- 2 Tablespoons sugar
- 1/4 teaspoon salt
- 1/2 egg, vigouously beaten (reserve other half)
- 2 Tablespoons cold milk
- 1 cup flour
- Filling: 2 to 3 cooked sweet potatoes (1 cup)
- 1/4 cup brown sugar
- 1 Tablespoon soft butter
- 1 Tablespoon vanilla
- 2 Tablespoons sugar
- 1/4 teaspoon salt
- 1/4 teaspoon cinnamon
- 1/2 egg from above
- 1/8 teaspoon allspice
- 1 Tablespoon heavy cream
- 1/8 teaspoon nutmeg
- Pecan Pie Syrup: 3/4 cup sugar 2 teaspoon vanilla
- 3/4 cup dark corn syrup
- pinches of salt and cinnamon
- 2 eggs
- 3/4 cup pecan pieces
- 1 1/2 Tablespoons melted butter
- For dough: Place butter and salt in bowl. Beat with mixer at high speed and add 1/2 egg and milk. Then add flour. Beat at high speed untill mixed. Place on floured surface and roll out.
- Filling: Add all ingredients together and mix with mixer about 3 minutes.
- Pecan Pie Syrup: Thoroughly combine with mixer until opaque in color. Stir in pecans at last. Spoon filling into crust, then syrup. Bake 325u0b0 1 1/2 hours.
