Down Home Peach Cobbler
- For Dough:
- 1 1/4 cups flour
- 1/3 c. sugar
- 1/4 t salt
- 7 T cold unsalted butter, cut into 1/4-inch cubes
- 1 egg yolk
- 2 t vanilla extract
- 2 T cold water
- For Cobbler:
- 3 lb. peaches, peeled, pitted and sliced
- 1/4 c. plus 2 T plus 1 t granulated sugar
- 1/4 c. plus 2 T firmly packed light brown sugar
- 2 1/2 T cornstarch
- 2 t fresh lemon juice
- 1/4 t freshly grated nutmeg
- 1/2 t cinnamon
- 1 T unsalted butter, cut into small pieces
- To make dough, combine flour, sugar and salt. Cut in butter. Cut in egg yolk and vanilla until blended. Add as much water as necessary for dough to come together. Wrap in plastic wrap and chill at least 1 hr.
- To make cobbler, combine peaches, all but 1 t. white sugar, brown sugar, cornstarch, lemon juice, nutmeg, and cinnamon. Toss. Pour into 2 qt. baking dish. Dot with butter.
- Roll out cobbler dough and tear into 3-inch (or so) pieces. Lay dough strips over top of cobbler. Sprinkle with final 1 t sugar.
- Bake at 425F for 10 minutes. Reduce heat to 350F and bake about 50 minutes more, until topping is lightly golden and filling is bubbling.
