Peanut Butter Scotchies
- 1/2 c. (1 stick) butter, softened
- 1 c. packed brown sugar
- 3/4 c. smooth peanut butter
- 3 eggs, slightly beaten
- 1/4 tsp. vanilla
- 1/4 tsp. light corn syrup
- 2 tsp. baking soda
- 4 1/2 c. quick rolled oats
- 1/3 c. plus 1 Tbsp. chocolate pieces
- 1/3 c. plus 1 Tbsp. butterscotch pieces
- 1/4 c. chopped nuts
- 4 oz. white chocolate
- In large bowl, cream butter and sugar.
- Add peanut butter and eggs; mix well.
- Blend in vanilla and corn syrup.
- Set aside.
- In another bowl, combine baking soda and oats.
- Add to sugar mixture. Mix well.
- Blend in chocolate and butterscotch pieces and nuts. Drop by scant tablespoonfuls onto greased cookie sheets.
- Using knife, spread each cookie into circle.
- Bake at 350u0b0 8 to 10 minutes.
