Oven-Smoked Turkey
- 1 turkey, thawed, washed and patted dry
- liquid smoke
- 1/2 c. oil and 1/4 c. salt
- 2 stalks celery, cut in half
- 1 onion, peeled and cut in 1/4's
- 1/2 green pepper, cut
- 3 cloves garlic, cut in 1/4's
- 3/4 c. vinegar
- 1 c. Coca-Cola
- 1/4 c. oil
- 1/2 c. Sauterne wine
- 1/4 c. liquid smoke
- 2 Tbsp. salt
- 2 Tbsp. pepper
- 2 Tbsp. parsley, chopped
- Rub turkey with liquid smoke.
- Mix salt and oil and rub turkey.
- Place vegetables in cavity.
- In deep
- roaster
- bake 1 hour at 375u0b0, uncovered.
- Mix remaining and
- pour over turkey. Lower
- heat to 325u0b0.
- Cover and bake until
- done.
- Serve
- with sauce.
