Polenta And Pear Cake

  1. 3 - 4 ripe pears stewed in 1/2 cup water with 1/2 cup sugar
  2. Cake:
  3. In a large mixing bowl add 4 eggs and 1 cup milk and beat until foamy.
  4. Add dry ingredients and mix until incorporated.
  5. Prepare a clay or stone shallow baking dish with butter ( you can melt butter and swish around pan or rub down pan with 2 tbs spoon butter leaving excess in the pan )
  6. Add the fruit and juices evenly to the bottom of the pan, pour over batter and bake 35-45 minutes in a 350 oven until golden brown.
  7. Serve warm with ice cream.
