Creamy Shrimp Or Chicken Nachos
- 2 C (8oz) grated Queso Blanco or Montery Jack cheese
- 1/3 C mayo
- 4 oz chopped cooked peeled and deveined shrimp (or chicken)
- 1/4 C minced green onions
- 1 chipotle chile in adobo sauce pureed and strained
- 1 T chopped gresh cilantro leaves
- 1/2 t grated lime zest
- 1/4 t ground cumin
- salt and freshly ground pepper to taste
- 3/4 C (3 oz) grated Cotija cheese
- 1 1/2 dozen large flat tortilla chips
- 1 1/2 dozen fresh cilantro leaves
- Preheat broiler. In medium bowl, stir together blanco cheese, mayo, shrimp, onions, chipoltle puree, chopped cilantro, lime zest and cumin. Season with salt and pepper. Spread about 1 T mixture onto each tortilla chip and plaace on a baking sheet. Broil until mixture begins to brown, about 1 minute. Sprinkle each with a generous t Cotija cheese.
- To serve: Put a cilantro leaf onto each nacho and serve immediately.
