Creamy Shrimp Or Chicken Nachos

  1. Preheat broiler. In medium bowl, stir together blanco cheese, mayo, shrimp, onions, chipoltle puree, chopped cilantro, lime zest and cumin. Season with salt and pepper. Spread about 1 T mixture onto each tortilla chip and plaace on a baking sheet. Broil until mixture begins to brown, about 1 minute. Sprinkle each with a generous t Cotija cheese.
  2. To serve: Put a cilantro leaf onto each nacho and serve immediately.
