World'S Easiest Banana Bread (Or Muffins)
- 3 large gushy ripe bananas
- 1 egg
- 2 Tb vegetable oil
- 1/4 cup milk
- 1/4 cup sugar
- 1 tsp salt
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1 1/2 cups flour
- 1/2 cup wheat germ (optional)
- 1) Preheat oven to 350u0b0.
- 2) Grease 9" loaf pan OR 12 muffin tins.
- 3) In a large bowl, thoroughly smash bananas with a fork.
- 4) Beat in egg, oil, milk, sugar and salt. Stir in baking soda and powder (it will start foaming).
- 5) Measure in flour and wheat germ if used. Mix quickly with coarse whisk or spoon. A few unmixed dots of flour are fine.
- 6) Turn into loaf pan OR muffin tins.
- 7) Bake for 45 minutes (loaf), 25 minutes (muffins). Toothpick should come out clean.
- 8) Cool and enjoy. Disappears in about 10 minutes in my house.
