Maggies Chilli Mac
- 1 box of Boca Meat Crumbles or 2/3 pound of ground beef
- 2- (smaller ones, think its the 14 oz) cans of diced tomatoes with chilis (mexican style)- DO NOT DRAIN
- 1 4-oz can of green chilies (mild) drained
- 1 1/2 cups of elbow macaroni, uncooked
- 2 1/2 cups of tomato juice (i buy the campbells brand in the cans. Buy two pop size cans and use the whole thing. no need to measure)
- 2 (smaller cans, once again thinking 14 oz) cans of beans- I use Northern Whites, but you can use pinto or kidney
- 2 tsp of chili powder
- 1 medium onion
- Can add green peppers as well
- Saute Onion until translucent. Add "meat" cook for 1 minute.
- Add Salt and Pepper to taste.
- Add chili peper.
- Add Tomatoe Juice, Green Chilis, tomatoes to onion/meat mixture. Bring to a boil.
- Add beans and elbow mac, reduce heat to a simmer. Cover and cook for 15 minutes- until mac is cooked. Make sure you cover!!!
- Serve with shredded cheese or some avacado etc.... Enjoy!
