Ceviche

  1. 1. Marinate fish (cut in small cubes) in a glass bowl overnight.
  2. 2. Drain the lime juice and rinse the marinated fish in water. Squeeze the fish to eliminate as much water as possible.
  3. 3. Add all ingredients to the fish. I start with the spices (garlic, salt & pepper, oregano, cilantro, green onions, olives, Italian dressing, Serrano chiles, tomatoes, and avocado(s)). After each addition I mix the ingredients together.
  4. 4. Finally, add more pepper and salt to taste.
  5. 5. Serve with chips. (recommend the lime flavored chips and cold Mexican beer)
