Ceviche
- 1 lb. fish- sea bass, Red Snapper, or cod
- 1/2 cup lime juice, 5-6 limes
- 1 large tomato, seeded diced
- 1 or 2 avocado(s) diced
- 3 green onions. thinly sliced
- 1/2 cup each sliced ripe olives (black and green)(hint-a small can of black olives)
- 2 TBL chopped green chili-Serrano (add more for more heat)
- 1 or 2 garlic clove(s)
- 2 TBL Italian Dressing
- 2-4 Tbl chopped cilantro
- 1 1/2 tsp oregano or 1/2 tsp dry
- Salt and Pepper to taste
- 1 bag tortilla chips (with a hint of lime)
- 1. Marinate fish (cut in small cubes) in a glass bowl overnight.
- 2. Drain the lime juice and rinse the marinated fish in water. Squeeze the fish to eliminate as much water as possible.
- 3. Add all ingredients to the fish. I start with the spices (garlic, salt & pepper, oregano, cilantro, green onions, olives, Italian dressing, Serrano chiles, tomatoes, and avocado(s)). After each addition I mix the ingredients together.
- 4. Finally, add more pepper and salt to taste.
- 5. Serve with chips. (recommend the lime flavored chips and cold Mexican beer)
