Almost No Knead Bread
- 2 Cups Bread Flour
- 1 Cup Wheat Flour
- 1/4 tsp Yeast
- 1/2 tsp Salt
- 1/2 TBsp White or Cider Vinegar
- 7 oz Water
- 3 oz Lager Beer
- 1/4 cup Oatmeal, Wheat Germ, or other desired grains
- Parchment paper
- Whisk Flour, Oatmeal/Grains, Salt, and Yeast together in large bowl.
- Add Water, Vinegar, and Beer and mix thoroughly with a plastic or wood spatula. Texture should not be gooey wet but shaggy damp.
- Cover with plastic wrap and let rise for 12-18 hours.
- Remove dough from bowl onto a lightly-floured surface, Fold and work dough a few times and shape dough into ball by pulling at the edges and folding back.
- On a 12-18" piece of Parchment Paper spray lightly with cooking spray. Using a skillet or pie pan place the dough on top of the parchment paper in pan, spray lightly with cooking spray and cover with plastic wrap. Let rise for 2 hours.
- At 1+30 hours heat oven to 450u0b0 and place heavy Le Cruset-type bowl (porcelain covered cast iron) in heating oven.
- When dough is ready place dough and paper into baking bowl. Bake at 450u0b0 for 30 min covered and then uncovered for 15-20 min.
- Use parchment paper to remove bread from baking bowl and let cool for 15 min.
