Ham And Sweet Potatoes In Sauce
- 3 Tbsp. vegetable oil
- 8 oz. frozen small white onions
- 1 lb. baked ham
- 3 c. chicken stock
- 1 Tbsp. mandarin peel, chopped
- salt and pepper to taste
- 1 Tbsp. margarine
- 1 lb. sweet potatoes, peeled
- 3 Tbsp. all-purpose flour
- 1 c. mandarin juice
- 2 c. broccoli florets
- Chop ham and potatoes into 1-inch cubes.
- Heat the oil and butter in Dutch oven.
- Add sweet potatoes and saute until lightly brown, add thawed onions, saute for 2 minutes.
- Remove potatoes and onions from the pan, mix flour with drippings, whisking constantly for 2 minutes.
- Gradually add the mandarin juice, chopped mandarin peel, and stock.
- Cook this mixture until thickened, add potatoes, onions, broccoli and ham.
- Cook for 10 to 15 minutes until the vegetables are tender and the ham is heated through.
- Serves 4 to 6.
