Mango Salad
- 10 cups red or green lettuce
- 2 1/2 cups arugula
- 1/2 cup watercress
- 3 tbsp. fresh chopped basil
- 3 mangoes
- 1/4 cup rice vinegar
- 3 tbsp. oil
- 2 tbsp. honey
- 1 teas. fresh mint
- 1 teas. fresh chives.
- salt & pepper to taste
- (I usually buy a bag of mixed greens and some arugula from trader joes and omit the water cress.)
- Wash all greens and toss lettuce, arugula, watercress and basil.
- Pit and peel mangoes and cut in slices. Chop some of the slices for 1/2 cup of mangoes.
- For dressing, in a blender or food processor, blend until smooth the chopped mangoes, vinegar, oil, honey, mint and chives.
- Drizzle over salad greens and toss.
- Arrange on salad plates and top with mango slices. Drizzle the rest of dressing over the salads.
- (Usually just toss the dressing and greens and then add the slices mango into one bowl.
